Ah, I hadn't ever tried the "manual" destination option, and I hadn't been able to figure out how to use parameters with the folder selections in destination, so I didn't realize that feature was already implemented. I'm playing around with the configuration now to see if I can use the time parameters in the path instead of the 'Create new separated backups' option and get the result I'm looking for.
EDIT: One remaining question: Is there any way to have Cobian still handle rotating the backups if I'm using the parameters for splitting the backups by date? Would I need to leave the 'Create Separated Backups' flag checked and let it timestamp both the job folder (via paramater) and the individual backup folders (via automatic stamping from backup separation)? I was hoping to only have the timestamps at the top-level, but it doesn't look like there's any way to achieve that at this time.
